Welcome to the second week of the H-E-B-ConAgra Back to School Meal Maker Challenge.

The Back to School Meal Maker Challenge os where 7 Texas bloggers offer quick and easy time meal solutions.  Each meal will have less than 10 ingredients, take less than 45 minutes to make and feed a family of four.

Each week there will be a featured ingredient where each blogger will incorporate into their recipe.  This week we work with Hebrew National Franks   Who doesn’t love hot dogs?

Keep the kids motivated to begin a new year with a “summer feel” meal.

Hot dogs for dinner are budget friendly, quick and can easily be adapted to all your families taste.

We transformed our dogs with the flavors of Mexico!  The taste of  Tacos from Mexico to be exact.   Que Rico!! 

One of the most popular topping for tacos in Mexico is rajas con queso.  So we thought why not add these cheesy mix to a piping hot dog.

Our first hot dogs is smothered in rajas con queso.  Rajas simple means strips, strips of poblanos in a queso sauce.  Roasted poblanos are charred under the broiler, peeled, cut into strips and added to a quick queso sauce.

Spoon over your dog and grab a napkin. They are messy.  Messy like cheese all over you chin messy..ahh amazing!

On to the next hot dog topping. Taco toppings are endless.  At our house cilantro, queso fresco and onions are a must when we serve tacos.  Why not add these to our dogs?

The crisp bite from the pickled onion combined with fresh taste of cilantro and crumbly queso makes for one cool dog.  My hubby enjoyed this colorful topping.  I personally enjoyed both.

But then again what mom wouldn’t enjoy a quick meal?  In this Texas heat less time in the kitchen is always welcomed!!  Enjoy!!

Rajas con Queso

1 tbsp butter

2 tbsp flour

2 poblanos

1 1/2 cups warm milk

3 cups melting cheese of your choice

salt

pepper

Preheat your broiler

Place poblanos on sheet pan.

Broil poblanos for about 10 minutes until charred on all sides.

Remove from broiler cover with dish towel and allow to rest for about 5 minutes.

Remove charred skin, stem and seeds. Cut into rajas (strips)

Melt butter in a large sauce pan over medium heat.

Add flour, whisk to combine and cook for about 2 minutes.

Slowly whisk in warm milk, until thick. about 6-7 minutes.

Remove from heat and add cheese.  When cheese has melted add rajas and stir to combine.

Season to taste.

 

Pickled Onion Hot Dog Topping

1 medium red onion, sliced

1 cup hot warm

1 cup queso fresco, crumbled

1/2 cup cilantro, chopped

1/4 cup lemon juice

salt

Add sliced onions and hot water to bowl and allow to sit for 4 minutes.

Drain. Add lemon juice.

Allow to cool in fridge for 15 minutes.

Add queso and cilantro, stir to combine.

Season to taste.

  3. FO REALLZZZ!! That hot dog is the most delectable thing I’ve seen on the web in a loooong time. I’ve had mexican hot dogs with bacon wrapped around them, but never a poblano cheese sauce. I’m sooo down!!
