 Quinoa with Strawberries and Buttermilk

I’ve made cookies, burgers and salad with quinoa, now I’m whipping up a hearty breakfast with this small wonder grain.  We have enjoyed a warm bowl of quinoa every day this week and with the winter chill in the air, it really hits the spot. This Cooking Light recipe calls for almonds, but we have topped it with pecans, walnuts (as pictured), sunflower seeds and chia seeds all with wonderful results.  Blueberries, blackberries, mango and cherries all worked well.

 

Quinoa with Strawberries and Buttermilk

Yield: serves 1

Ingredients

  • 3/4 cup cooked quinoa
  • 1/4 cup low-fat buttermilk
  • 1/2 cup sliced strawberries
  • 2 tablespoons toasted sliced almonds
  • 1 teaspoon honey

Instructions

  1. Combine cooked quinoa and buttermilk in a microwave-safe bowl. Microwave at HIGH 45 seconds. Stir; let stand for 1 minute. Top with sliced strawberries, almonds, and honey.

He hecho galletas, hamburguesas y ensaladas con quinoa, ahora estoy cocinando un abundante desayuno con este pequeño grano.  Hemos disfrutado de un tazon caliente de la quinua todos los días de esta semana y con el frío del invierno en el aire, disfrutamos de la calidez. Esta receta Cocina Light llama para almendras, pero hemos  tratado pecanas, nueces (como en la foto), semillas de girasol y las semillas de chía todos con resultados maravillosos. Los arándanos, moras, mango y cerezas todo funcionaba bien.

  

Quinoa con Fresas y Suero

sirve 1

receta de Cooking Light

3/4 taza de quinoa cocida

1/4 taza de suero

1/2 taza de fresas en rodajas

2 cucharadas de almendras tostadas en rodajas

1 cucharadita de miel

Combine quinua cocida y suero de mantequilla en un recipiente apto para microondas. Cocine a potencia alta durante 45 segundos. Revuelva, deje reposar un minuto. Cubrir con rodajas de fresas, almendras y miel.
