I enjoy entertaining my family and friends at home. I enjoy the experience of creating a menu, signature cocktail, shopping for ingredients and pulling together a festive tablescape. When Kikkoman reached out and asked me to share one of my favorite recipes for an appetizer I knew I had to share my roasted pepita crusted cauliflower. A quick appetizer that only requires a few key ingredients my pepita crusted cauliflower is always a hit.
I reached for the Kikkoman Teriyaki Marinade and headed into the kitchen. A handful of pepitas into the food processor, pulsed until finely ground and combined with Kikkoman Teriyaki to make your marinade.
The pepitas give the cauliflower a crispy bite while the marinade gives it a tangy bite, delicious. Dice your cauliflower into bites size pieces, small enough to serve with small forks or toothpicks. I often place the baking sheet on the table right out of the oven and pop another sheet in, these nibbles got quick.
A few squeezes of fresh lime juice and your set.
Kikkoman Teriyaki sauce is made of a simple mixture of soy sauce and spices and has been popular since it was first created. I like to brush salmon for a quick dinner of use it as a glaze for roasted shrimp. The lustrous sheen of the sauce inspired the name “teriyaki.” Japanese-American in Hawaii added fresh ginger, brown sugar, pineapple juice and green onions to create the teriyaki sauce we know and love today.
- 1 medium head cauliflower, diced into bite-sized pieces
- 1 cup pepitas
- ½ cup Kikkoman Teriyaki Marinade
- Fresh lime wedges
- Preheat your oven to 425 degrees and line a baking sheet with parchment paper. Add pepitas to a food processor and process until finely ground. Whisk together finely ground pepitas with teriyaki marinade until smooth. Toss marinade with diced cauliflower, toss to coat cauliflower and place on baking sheet. Bake 10-15 minutes, serve warm with lime wedges.
