Pumpkin season is here! At my home the month of October officially welcomes the holiday baking season and I couldn’t be happier to crank on my oven and bring you exciting new holiday treats.
I’ve teamed up with HEB to share the kick-off of the Pumpkin event which starts today at all participating HEBs. In celebration of this fun event today I want to share with you a delicious recipe for pumpkin tres leches cupcakes which are made with HEB Pumpkin Spice Bread mix that are perfect for the holiday baking season!
Tres leches cake is a simple but delicious, custard soaked cake that is revered throughout Latin America and has crossed over to become widely popular here in the United States.
A cake often served for celebrations such as birthday parties, baptisms, wedding and quinceñeras, this cake is made by adding tres leches – evaporated milk, condensed milk and heavy cream, to a cake fresh from the oven.
Today I want to share with you a single serving version of tres leches by transforming this traditional Latin cake into cupcakes made with HEB Pumpkin Spice Bread mix. To make these amazing pumpkin tres leches cupcakes all you need is a box of H-E-B pumpkin spice mix, water, oil and eggs. Next grab your favorite mixing bowl and let’s start mixing up our batter.
Next we scoop our batter into our cupcake liners. I like to use an ice cream scoop for even batter distribution. How cute are those cupcake liners, you can find these and plenty at your local H-E-B.
Now we pop them into the oven until a toothpick inserted comes out clean, about 20 minutes. While the cupcakes bake, whisk up your tres leches milk mixture. Today I am using sweetened condensed milk, evaporated milk and half-and-half.

Next slowly drizzle your milk mixture over pumpkin cupcakes, this is my favorite part of the entire recipe. Allow to cool and top with whipped cream and chopped pecans.

- 1 (16 oz) box H-E-B pumpkin spice bread mix
- 1 cup water
- 1/2 cup oil
- 2 eggs
- 1 (14oz) can of H-E-B sweetened condensed milk
- 2 (5 oz) cans of H-E-B evaporated milk
- 1 cup half-and-half milk
- whipped topping
- 1 (2oz) bag of Hill Country Fare chopped pecans
- Prepare pumpkin spice bread mix as instructed on package.
- Evenly scoop batter into cupcake pan lined with cupcake liners.
- Bake until a toothpick inserted comes out clean, about 20 minutes.
- While cupcakes bake whisk together milks.
- Carefully remove baked cupcakes from oven and with wooden skewer poke holes in warm cupcake.
- Slowly drizzle milk mixture over each cupcake.
- Allow to cool completely.
- Top with whipped topping and chopped pecans.
