Fiesta!! Fiesta!!
Hey guys we had a small fiesta at our house last night and had every intention to post this last night, but we all started jabbering at the table-the conversation kept going, going, and going. Does your family break into intense conversations at the dinner table? So we had a fiesta what was the occasion? Let's see..clean house, clean underwear, clean bathrooms, little sis upcoming wedding, video chatted with my two nieces form Kansas.....the list is endless... The truth is I woke up this morning with a intense craving fro chiles rellenos. Any one who has ever made chile rellenos knows these babies are soul satisfying, kiss your mama good. The things is I wasn't looking forward to roasting, peeling and frying the poblanos -not today when the Texas heat is shining strong. I decided on a version you bake in the oven, which freed my hands to make horchata- a blended agua made with rice, almonds and Mexican cinnamon. With the time saved I also made a quick granita of grapefruit, ginger and key limes- tart yet refreshing. Nothing complicated, easy to put together and all veggies, yup my stuffed poblanos are stuffed with black beans. Pretty Pancakes
Hello dears, how was your weekend? Mine was F-A-N-T-A-S-T-I-C!!! Yup it was one of those weekends when there’s no commitments, no obligations, Nada I mean Nada. Those are rare around our house so we took complete advantage and just let loose, went with the flow and enjoyed each other’s company. When I begin blogging in my wildest dreams did I ever expect to meet the coolest chicks, baddest dudes, funniest mommies and such loving people….I was pleasantly surprised this week to be awarded two awards by two very fine ladies. The Kitchen Masochist was ever so kind to give me a I Love you Blog award, how sweet of her…she said it was my butt tacos that drew her to my blog–oh a friendship over butt tacos- doesn’t get better than that? Meet Chuls…My Secret Weapon…
In my earlier post I whined..ya I whine when I’m stressed about how I had alot of school work to get done, but instantly felt better when I realized my salvation was with me all along. I hope you didn’t think I was going to say take-out? nah.. Well let me introduce you to Chuls, she’s my 10yr old daughter and guess what? She steps in when mommy is losing her mind and I do lose my mind at least once a week. Let me give ya some background first- when she was 8yrs old I decided to begin introducing what I thought were “life skills.” I wanted her to leave for college and be prepared so, we started with baby steps- clean your room, pick up your laundry, wipe down the dinner table- well she did such a great job and was so excited abut her little accomplishments – aren’t all 8yrs old though? I began adding different skills I thought could help – how to properly wash her laundry , what to do in an emergency, simple cpr skills, basic kitchen skills- since she already knew how to chop and dice I walked her through scrambled eggs – to my surprise she loved it..she wanted to learn more. I was thrilled so, next was pancakes, quesadillas, pies, cookies and soon she began looking through my cookbooks and ripping out recipes from magazines she wanted to attempt. One morning after we had been at this for a year hubby and I woke up to a complete breakfast she had prepared completely alone. I was floored!! Read more
Corpus Christi, Cutlets, Chapters, Capers and Clarity
I just returned from a quick trip to Corpus Christi, Texas where my big sis lives to celebrate my niece’s 8 bday.. I had such a great time, there was chicken, potato salad and cake- oh cake how I love thee. While I was on my second piece of cake (yes second–I was stressed!!) I couldn’t shake the feeling of guilt knowing I had left town without completing the chapters I needed to read for class. I tried to shake it off , but it was there and wouldn’t let me enjoy my cake..darn I instantly knew what was waiting for me at home–late nights of catching up.. I Sweet Life cannot lie, I will any excuse under the sun to stuff by fistfuls my mouth with chocolate. Yes– I am being totally and completely honest with you my fellow readers. I have no shame..I made this recipe only to make myself feel better in knowing that I would ingest my beloved chocolate..pureed sweet potatoes are added to the mix making it healthier for you…as in result giving me another EXCUSE to love myself silly with chocolate….peace and goodnight…Enjoy!

Bad Blogger and working with what ya got…..
Hello..anyone out there?? I knowI know I am a horrible blogger…but my mom was in town and I needed mommy time..understand??Okay let’s move on..
My mom left yesterday and I quickly realized my house had slowly slipped into a wasteland of dirty laundry, dusty corners and bathrooms that seriously needed some TLC, so I spent yesterday tidying up and catching up on some major homework…please please let this semester end soon..I am so done!!
Well this morning I feed my girls’ their breakfast and suddenly realized I had not made it to the store…aw man!! I stood in front of my bare cabinets shed some tears, laughed like a fool, pulled what I had and made dinner. This is a EASY I mean EASY dinner cook some rice, throw in what ya got, dress it up with some olive oil, lemon juice, salt and pepper and chow baby chow…
My daughter was a doll and modeled for me, I went to ask my five year old if she wanted to srike a pose and I found this….omg…Love my 5yr old!!
Feel free to add whatever you have on hand..chicken chunks, tuna, ham, sweet potatoes, corn,grapes,spinach…the possibilities are endless…Enjoy!!
