Guava-Tequila Glazed Fajitas

 

 

Hello my loves.  I hope all is well.  My sincerest apologies for being completely absent for the last week, but my family is in town and well my heart has been completely occupied with so much dang cuteness.  With my nieces, nephews, my brother and sister- really- my heart cannot take so much love and complete joy.  My little sister arrived in town last Thursday and just to have her in Texas has been wonderful.  Those with kids can understand that dinner with other adults, where cocktails are consumed and food does not need to be cut into smaller pieces…well that in itself almost brought me to tears.  Not leaving the kiddos out we visited a butterfly park and just the sight of those little faces taking in the butterflies, well people I have become a deranged love filled, emotional wreck and semi drunk with so many wines bottles being enjoyed over games of UNO.  Yes, we are addicted to UNO and it literally cracks us up that we are able to talk trash, change diapers, hand out snacks, consume  2 bottles of wine all the while still watching our cards.  With some much going on I have had little time in the kitchen but a girl’s gotta eat, right? So we whipped up these quick fajitas glazed with guava jelly and cheap tequila (the best for margaritas).  If you cannot find guava jelly feel free to use any you have on hand.  I have used blackberry with great results, the guava gives these fajitas a tart back ground and the guava infuses these fajitas with a beautiful rich red glaze. Enjoy! Yesterday began a week of sharing my favorite recipes from Los Barrios Family Cookbook and I also had the pleasure to chat with Diana about her love of cooking and her personal time spent with family.  Many of the recipes in this cookbook I found to be  perfect for our busy schedules, many of the ingridients are my basic staples in my style of cooking, the preparation is uncomplicated with tasty results.  I have made these chalupas numerous times since purchasing her book, for the simple fact that they make a super quick lunch,  my girls enjoy them for friday movie night and they are “family friendly” which means anyone of us can put these together.  Oh and what’s a great chalupa without a great spicy sauce to drizzle on? Strawberry Tortillas — Blueberry Tortillas

 

 

Chuls suggested we make something “Cool” for July 4th since there would be no fireworks, no festivities, not much of anything since Alex decided to swing by for a quick visit.  Thankfully we were spared the grunt and only had a full day of rain and slow Internet service so we are blessed and no one is complaining.  We are celebrating July 4th small this year, which is kinda cool- just us four hanging out and chomping on our “cool” colorful tortillas.  These tortillas are a twist on your ordinary tortilla recipe, simply replace the water with the juice of your choice.  We tried strawberry and blueberry juice to add the colors of our flag to our festive meal.  I made these in the morning and chuls had one slathered with dark chocolate almond butter and slices of green apple.  Pips went for a cheesy version which included sliced peaches.  Hubby loved both versions, but thought they would taste even better loaded with Texas brisket. Corpus Christi, Cutlets, Chapters, Capers and Clarity

 

I  just returned from a quick trip to Corpus Christi, Texas where my big sis lives to celebrate my niece’s 8 bday.. I had such a great time, there was chicken, potato salad and cake- oh cake how I love thee. While I was on my second piece of cake (yes second–I was stressed!!) I couldn’t shake the feeling of guilt knowing I had left town without completing the chapters I needed to read for class. I tried to shake it off , but it was there and wouldn’t let me enjoy my cake..darn I instantly knew what was waiting for me at home–late nights of catching up.. I am so close I can taste the end of this horribly bitter semester. Strawberry Avocado Salsa

  
Well darlings we have made it to dinner using my beloved strawberries. Oh ya that’s strawberries in salsa don’t worry this is not a heat version of salsa it’s more of a sweet and creamy. You get a dash of sweet from the strawberries and the creamy sidenote from the avocado. Served along carne asada with corn tortillas and any toppings your heart desires this make for a great weeknight dinner. This would also be great on chicken over greens, oh yes lovely. Enjoy!     
  
Strawberry Avocado Salsa
Fitness Magazine
June 2006
8 large strawberries, hulled and diced
1/2 avocado, pitted, peeled and diced
1 medium white onion, diced- about 1/3 
1 tbsp finely chopped fresh cilantro
lime juice
chili powder (optional)
salt and pepper
Toss together strawberries, avocado, onion, cilantro and lime juice and chili powder if using. 
Season with salt and pepper.

Baked chicken with White Beans and Tomatoes

  

Ever had to get dinner ready quickly? Yeah life is complicated school, work, activities and by the time you know it’s dinner time. Your tired, your drained but you still want to eat something delish, but quick. Here’s such a meal, I have made this countless times and never been disappointed . Feel free to add what you like, I am always throwing something different in just to mix it up. What’s nice is that it only have five ingredients, ya nice– real nice. Hey it’s from Gourmet magazine so they know what their doing. Enjoy

   

Baked Chicken with White Beans and Tomatoes
serves 4
Gourmet Magazine December 2004

6 bacon slices- cut into 1 inch pieces
4 large chicken thighs with skin and bone
2 medium onions, chopped
1 can stewed tomatoes 14-16 oz
2 cans small white beans 15-16 oz rinsed and drained
Put oven rack in middle position and preheat to 350 degree
Cook bacon in a heavy oven proof skillet over moderate heat, stirring occasionally, until browned and crisp, about 8 minutes. Transfer bacon with slotted spoon to paper towels to drain, reserving fat in skillet.
While bacon is browning, pat chicken dry and season with 1/2 tsp salt and 1/4 tsp pepper. Brown chicken in fat in skillet over moderately high heat, turning over once, about 8 minutes total, then transfer chicken with tongs to paper towels to drain.
Pour off all but 3 tbsp fat from skillet and reduce heat to moderate. Cook onions in skillet with 1/4 tsp salt, stirring and scraping up any brown bits, until golden brown about 10 minutes. Stir tomatoes and juice into onions and boil, uncovered, 3 minutes to concentrate juices slightly. Stir in bacon and beans and bring to a simmer.
Nestle chicken, skin side up, in beans and bake, uncovered, until chicken is cooked through 20 to 25 minutes.
**** I also might throw frozen peas in there if I do not have beans, or I add sliced sauteed mushrooms instead of beans. I serve this over brown rice, yummy!!
