Buttermilk Pancake with Strawberry Compote
I plan to celebrate the Valentine’s Day all weekend long after all who doesn’t enjoy an extra dose of sweetness? I know I do.
I can think of no better way to treat my family this Valentine’s Day weekend than to surprise them with a stack of fluffy buttermilk pancakes topped with a warm strawberry compote.
I thought sweet, dessert pancakes would be a wonderful start to our Valentine weekend and when HEB reached out and asked me to share an easy dessert featuring Kerbey Lane Cafe Buttermilk Pancake Mix I jumped at the chance. I had my first bite of Kerbey Lane pancakes at the age of 17 with my older sister in Austin, Texas. I fell in love at first bite and have been enjoying them ever since.
Because so many customers requested the recipes (me included) they finally decided to package some of the most popular recipes for people to enjoy at home and they can be found at any HEB. Yay!
Yes, I know pancakes are not typically a dessert, but add a spoonful of sweet, warm strawberry compote over a stack of pancakes and I guarantee you will think you are having dessert for breakfast, it’s so super good that HEB has decided to share this yummy goodness with my readers with a sweet giveaway. - 1 pkg 16 oz Kerbey Lane Buttermilk pancake mix,
- 1 pound fresh strawberries
- 2 teaspoon sugar
- 1 teaspoon vanilla extract
- 1 tablespoon water
For Strawberry compote: Wash, hull and slice strawberries. Place sliced strawberries,sugar, vanilla and water in a bowl; set aside for 10 minutes while you prepare pancakes.
Prepare pancakes as indicated on package.
Place strawberries in saucepan over medium heat. Bring to a gentle simmer, stirring gently to not break up the strawberries. Simmer for 5 minutes. Remove from heat and serve warm over pancakes.
