Easy Summer Berry Pie
Every year we spend July the 4th at the beach. A day spent lounging at the beach, playing in the water, building sandcastles with the kids, looking for seashells and my hubby at the grill.
When the sun goes down everyone settles in to enjoy the fireworks and have dessert. This year I’ve decided to feature sweet summer berries. A fresh berry pie made with strawberries, blueberries and laced with stars. This pie quickly comes together with pre-made pie crusts or if you have pie crusts in the freezer even better.
Easy Summer Berry Pie
Serves 6-8
2 cups blueberries
2 cups strawberries, hulled and chopped
3/4 cup sugar
1/4 cup cornstarch
2 tablespoons butter
1 egg
1 tablespoon water
2 unbaked pie crusts softened as directed on box
Preheat oven to 350°F. In a large bowl stir together the blueberries, strawberries, sugar and cornstarch.
Pour into an unbaked 9-inch pie crust. Cut butter into small pieces and dot the top of the fruit.
Roll out the remaining pie crust scraps and with a star cookie cutter cut shapes. Place the shapes on top of the pie in a decorative pattern.
Beat together the egg and water. Lightly brush the mixture onto the star pie crust shapes and around the perimeter of the crust.
Place the pie on a baking sheet and bake for 50-55 minutes or until bubbly and golden brown. Let cool on wire rack completely before cutting.
Notes: to bake my pie I used 3 unbaked pie crusts to fit into the Chinet 8 inch square pan baking pan. Roll two baking crust together and mold into the pan. Continue with recipe.
