On Saturday we attended the Night of Lights at the UTPA campus. Activies included a parade, rides for the kids, entertainment from local schools and organizations and of course the main attraction –the food. They had an assortment of booths offering fajita tacos, hot chocolate, pan dulce, frito pie, turkey legs, chocolate dipped fruit and funnel cakes-be still my heart–I love funnel cakes, everything about them drives me insane, their crispy fried edges, the swirls of dough, and the sweetness of the almost a pound of powdered sugar coating the lovely mound of goodness. The girls’ had a great time jumping on the moonwalk, riding the rides and the night ended with a bang—Fireworks!!! Great fun at UTPA, this is a yearly event, so I look forward to next year’s warm funnel cake.
