Moscato Cake

Ingredients

  • 1 ½ cups unsalted butter softened
  • 3 cups sugar
  • 5 eggs
  • 3 cups flour
  • ¾ cups Moscato wine
  • For strawberries-
  • 3 cups fresh strawberries sliced
  • ½ cup sugar
  • 1 cup moscato wine

Instructions

  1. Preheat oven to 350 degrees.
  2. Generously coat a 9x13 pan with cooking spray or butter.
  3. In a bowl of an electric mixer add butter and beat until soft and fluffy, about 5 minutes.
  4. Slowly add the sugar, continue beating until butter/sugar mix is pale in color, about 5 minutes.
  5. Add eggs one at a time, beating well after each addition and scraping down sides of bowl.
  6. Add flour and wine in batches. Add 1 cup of flour, mix just until combined and add ¼ cup of moscato, mix. Add the next cup of the flour, mix; then another ¼ cup of wine, mix. Add last cup of flour, mix and add final ¼ cup of wine, mix.
  7. Bake for 50minutes to 1 hour, or until skewer comes out clean.
  8. While cake is baking add sugar and wine to sliced berries, refrigerate until ready to serve with cake.
