Mexican Breakfast Pizza

Ingredients

  • 4 flour tortillas
  • ½ cup roasted red pepper Sabra hummus
  • ½ cup prepared refried beans
  • Cooked chorizo
  • 4 Eggs
  • Sabra Salsa – Homestyle mild
  • Queso fresco
  • Cilantro

Instructions

  1. Preheat oven to 350 degrees. Place tortillas on a baking sheet and lightly coat with olive oil.
  2. Bake until crispy and lightly browned. While tortillas bake combine hummus and refried beans in a small nonstick saucepan and heat through. Spread each tortilla evenly with hummus-bean mixture and top with chorizo, fried egg, salsa, queso fresco and cilantro.
