Banana Bread Waffles with Bourbon-Raisin Syrup

Ingredients

  • For the waffles:
  • 1 13.7 oz box of Chiquita Banana Bread Mix
  • 1 cup mashed bananas approx. 2
  • 1 egg lightly beaten
  • 1/3 cup water
  • For Bourbon-Raisin Syrup
  • 1 cup maple syrup
  • 1/2 cup Bourbon
  • 2 tablespoons butter
  • ½ cup Sun-Maid raisins

Instructions

  1. For waffles: Pre-heat your waffle griddle. Stir contents of banana bread mix with mashed banana, egg and water until smooth. ladle batter on pre-heated waffle griddle and cook until golden and fully cooked, about 3-5 minutes. Serve warm with syrup.
  2. For Syrup: In a saucepan bring maple syrup and Bourbon to a boil. Reduce heat add raisins, butter and gently simmer until ready to serve.
