Roasted Pepita Crusted Cauliflower

Ingredients

  • 1 medium head cauliflower diced into bite-sized pieces
  • 1 cup pepitas
  • ½ cup Kikkoman Teriyaki Marinade
  • Fresh lime wedges

Instructions

  1. Preheat your oven to 425 degrees and line a baking sheet with parchment paper. Add pepitas to a food processor and process until finely ground. Whisk together finely ground pepitas with teriyaki marinade until smooth. Toss marinade with diced cauliflower, toss to coat cauliflower and place on baking sheet. Bake 10-15 minutes, serve warm with lime wedges.
