Quick and Easy Burrito Bowls

Ingredients

  • 3 tablespoon of olive oil
  • 1/4 cup of diced onion
  • 1 pound boneless skinless chicken breasts, diced into bite sized pieces
  • 1 package Knorr® Fiesta Sides™ - Mexican Rice
  • 1 15 oz can of reduced sodium black beans drained and rinsed
  • 1 cup Monterrey jack
  • ½ cup fresh pico de gallo

Instructions

  1. Start by sautéing onions in 2 tablespoon of olive oil until they start to soften.
  2. Season diced chicken with 1 teaspoon of kosher salt.
  3. Add chicken to pan and cook over medium high heat until chicken has started to brown, about 5 minutes.
  4. Remove chicken from pan and using remaining 1 tablespoon of olive oil prepare Knorr® rice sides as directed on package.
  5. Stir in cooked chicken, black beans and Monterrey jack cheese.
  6. Top with fresh pico de gallo.
