Skillet Chicken Fajita Rice is a one pan dinner delight. Chicken, rice, bell pepper and onion seasoned with cumin, oregano and lime juice ready in under 30 minutes is my idea of the perfect meal.

Ingredients
1tablespoonolive oil
1poundboneless chicken breastssliced
1teaspoonpepper
1teaspoonsalt
1teaspooncumin
1teaspoonoregano
1onionsliced
1green bell peppersliced
1red bell peppersliced
Lime juice
½cuprice
1cupwater
Fresh cilantrowashed and chopped
Instructions
Preheat oven to 350 degrees.
In a cast iron skillet or oven safe skillet heat oil over medium-high heat. Add chicken, sauté until browned on both sides, about 2-3 minutes. Season with pepper, salt, cumin and oregano, stir to combine. Add onions, peppers, lime juice, stir continue cooking for 5 minutes. Add rice and water, stir to combine.
Carefully cover skillet with foil, place in oven for 20 minutes. Carefully remove from oven, remove foil, and serve warm garnished with cilantro.
