Poblano Breakfast Scramble

Poblano Breakfast Scramble made with breakfast sausage, hash browns, poblanos and onions is topped with cheese and baked until bubbly.

Ingredients

  • 2 tablespoon oil
  • 1 pound breakfast sausage
  • 1 poblano pepper seeds removed and diced
  • 1/2 onion diced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 package frozen diced hash browns
  • 1 cup shredded cheddar cheese
  • Cilantro

Instructions

  1. Pre-heat oven to 325 degrees.
  2. In a skillet heat oil over medium high heat. Cook sausage, breaking up with spoon until fully cooked.
  3. Remove cooked sausage from pan, add poblanos and onions. Cook until light and translucent, seasoning with salt and pepper.
  4. Add hash browns, stir to combine, and cook an additional 5 minutes.

  5. Return the sausage to the skillet, stir to combine.
  6. Top with cheese and bake in a preheated 325-degree oven for 15-20 minutes. Top with cilantro, serve warm.

  7. Store any leftovers, covered in the fridge. Re-heat leftovers in a warm oven or microwave covered with a damp paper towel.
