One Bowl Dulce de Leche Brownies Makes 24

Ingredients

  • 1 cup butter melted and cooled
  • 1 cup sugar
  • 1 cup packed dark brown sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup Dutch-processed or unsweetened cocoa powder
  • 1 teaspoon espresso powder optional
  • 1 teaspoon salt
  • 1 ¼ cups semi-sweet chocolate chips
  • 1 cup pecans chopped
  • 1 (13.5 oz) can dulce de leche, divided
  • 1 cup roasted and salted pepitas optional

Instructions

  1. Preheat oven to 350°F. Spray a 9×13 baking pan with nonstick cooking spray.
  2. In a large mixing bowl stir together melted butter, granulated sugar, brown sugar, eggs, and vanilla extract until smooth and combined.
  3. Sift in flour and cocoa. Add the salt and espresso powder, if using, and stir until just combined. Don't over mix.
  4. Fold in chocolate chips and pecans.
  5. Spread evenly into prepared pan. Open dulce de leche can, spoon half into bowl. Warm half the can of dulce de leche in microwave, about 10 seconds.
  6. Drizzle warm dulce de leche over the brownie, then run a knife through the batter in a swirl pattern.

  7. Bake for 25-30 minutes on the middle rack in the oven until the brownies are just set to touch.
  8. Don't over bake the brownies. They will set up as they cool.
  9. Remove from oven and let cool before cutting into squares.
  10. Serve drizzled with remaining dulce de leche, warmed, and sprinkled with pepitas.
