Strawberry Lime Concha Ice Cream Sandwiches

Ingredients

  • 1 pound strawberries hulled and sliced
  • 3 tablespoons honey
  • 1 tablespoon freshly squeezed lime juice
  • 1/4 teaspoon lime zest
  • 4 conchas
  • Vanilla ice cream

Instructions

  1. Combine strawberries, honey, lime juice and lime zest.
  2. Let stand at room temperature until juices are released, at least 30 minutes.
  3. Strawberries can be refrigerated, covered, up to 1 day.
  4. Slice concha in half.
  5. Place one or two scoops of ice cream on bottom half of concha.
  6. Top with strawberries.
  7. Place top of concha over strawberries.
