Choriqueso

Ingredients

  • 2 tablespoons oil
  • 1 large onion diced
  • 1 jalapeno finely diced
  • 1 (10 oz) package of Pork Chorizo
  • 2 medium tomatoes diced
  • 1 cup cilantro washed
  • Shredded Oaxaca cheese
  • Tortillas or tortilla chips

Instructions

  1. Heat oil in a nonstick pan over medium heat. Add onions, jalapenos, and chorizo to pan, cook, breaking up with spoon until fully cooked, about 5-7 minutes.
  2. In a bowl combine diced tomatoes, and cilantro; stir to combine.
  3. Set aside until ready to use.
  4. Preheat broiler.
  5. With a slotted spoon divide chorizo-onion, jalapeƱo mixture into four individual oven safe serving dishes, top each dish with tomato and cilantro and top with cheese.
  6. Broil until cheese is melted, about 5 minutes.
  7. Serve warm with tortillas or tortilla chips.
