Tomato Cucumber Panela Salad

Ingredients

cups
cherry tomatoes,
halved
2
cucumbers,
diced
1
(16 ounce) pkg Panela cheese,
cubed
1
bunch cilantro
washed and finely minced
1/2
cup
olive oil
2
tablespoons
white vinegar
2
tablespoon
lime juice
1
teaspoon
salt
2
teaspoon
pepper
Instructions
Place tomatoes, cucumber, and panela in a bowl.
Whisk together olive oil, vinegar, lime juice and salt and pepper until well blended.
Stir in cilantro. Pour dressing over salad, stir to combine, and chill until ready to serve.
