Quick and Easy Salsa Verde Shrimp

Ingredients

  • 2 pounds shrimp, peeled and deveined
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 onion, finely diced
  • 2 cups salsa verde
  • steamed rice, quinoa or warm tortillas
  • 1 cup cilantro, chopped

Instructions

  1. Prep the Shrimp: Rinse the shrimp under cold water and pat them dry with paper towels. Season shrimp with salt, pepper, and garlic powder, stir to combine.
  2. In a large skillet heat oil over medium-high heat, add diced onion, sauté until light and translucent, about 3 minutes.
  3. Add the seasoned shrimp to the skillet in a single layer, ensuring they are not overcrowded. Cook for 2-3 minutes on each side or until they turn pink and opaque.
  4. Once the shrimp is cooked through, pour the salsa verde into the skillet, stirring gently to coat the shrimp evenly. Allow the mixture to simmer for an additional 2-3 minutes, allowing the flavors to meld together.
  5. Remove from heat and garnish with chopped cilantro, lime wedges, and sliced avocado if desired. Serve immediately over steamed rice, quinoa, or warm tortillas for a complete meal.
