Roasted Grape Margarita

Servings 4 -6ounce margaritas

Ingredients

  • 1 -2 pounds seedless grapes
  • Olive oil
  • Salt
  • Pepper
  • Juice from 1 orange plus 1 tbsp zest
  • 1/3 cup fresh lemon juice
  • 1/2 cup Cointreau
  • 1 cup tequila
  • Lemon wedges

Instructions

  1. On a small plate spread salt. With lemon wedges moisten rim of 4- 6 ounce glasses.
  2. Dip glasses into salt. Place glasses into freezer to chill.
  3. Toss grapes with olive oil, salt, pepper and orange zest.
  4. Place on baking sheet and roast in a 450 oven for 10 minutes.
  5. Place roasted grapes and orange juice in a blender. Blend until smooth.
  6. Strain and combine with lemon juice, cointreau and tequila.
  7. Garnish with lemon or grapes.
