Place onion rings, bell peppers, jícama, and mango in a mixing bowl and toss lightly with dressing. Allow to marinate, refrigerated, for at least 30 minutes.

Add cilantro, spinach, tortilla strips, and salt.

Toss again and garnish with reserved peach slices.
