Crockpot Ropa Vieja

Ingredients

flank steak

red bell peppers

onion

can fire roasted diced tomatoes

vinegar

chipotle chile in adobo
finely diced

tablespoons
adobo sauce

garlic cloves
minced

bay leaf

tsp
ground cumin

tsp
salt

tsp
freshly ground pepper

tablespoons
chopped pimiento stuffed olives
Instructions
In a crock pot add tomatoes, vinegar, diced chipotle, adobo sauce, garlic, bay leaf, cumin, salt and pepper.
Stir to combine.
Add flank steak, onions and bell peppers.
Cook on low for 4- 6 hours.
When ready to serve sprinkle stuffed olive and serve alongside rice.
