Watermelon Cucumber Queso Salad with Pepita Dressing

Ingredients

  • 6 cups watermelon diced
  • 3 cucumbers thinly sliced
  • 1 cup queso fresco crumbled
  • For dressing:
  • 1/2 cup pepitas pumpkin seeds
  • 1 garlic clove minced
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1/4 cup red wine vinegar
  • ΒΌ cup cilantro stems removed
  • Juice from 1 lime
  • 1 cup olive oil

Instructions

  1. In a large bowl toss diced watermelon and slice cucumbers in pepita dressing, transfer to a large platter and sprinkle with crumbled queso fresco and garnish with pepitas. For dressing: Place all ingredients in a blender, blend until smooth. If dressing is too thick add water by 1 tablespoon to thin out, season to taste.
