Watermelon Mint Champagne Cocktail

  • 1/2 cup water
  • 1/2 cup sugar
  • 6-8 Fresh mint sprigs
  • 6 cups diced watermelon
  • 1 bottle of Champagne
  • Mint for garnish


  1. In a small saucepan, simmer water and sugar until the sugar dissolves, about 5 minutes; remove from heat, add mint and allow to cool to room temperature. Blend watermelon in a blender until smooth and strain. Stir in mint simple syrup and chill until ready to use. Pour ΒΌ cup of watermelon mint juice in each champagne glass and top with chilled champagne.
