Amaranth Atole with Pears (Atole de Amaranth con Peras)

Ingredients

  • 1 cup Amaranth
  • 3 cups water
  • Pinch of salt
  • Agave
  • 1 medium pear diced and cored
  • 4 tablespoon of nuts your choice (optional)
  • Milk optional

Instructions

  1. Bring water to boil. Add salt and amaranth. Return to a boil and then cover, reduce heat and allow to simmer for 20 minutes or until amaranth is tender. Stir occasionally. Add agave to taste, diced pears and, if using, nuts and milk. Mix and serve warm.
