In a small saucepan, bring water and sugar to a boil, stirring until all sugar dissolved. Remove from stove, add mint and allow to steep. Once syrup has cooled, strain.

For mint salt:

Place mint on cutting board and sprinkle with salt, using a sharp knife finely mince mint leaves and salt. Sprinkle on fresh watermelon.

For cocktail:

In a ice shaker filled with ice add vodka, watermelon juice and mint syrup. Shake until well chilled, strain into glass, Garnish with fresh watermelon and mint salt.
