Skillet Chicken Fajita Rice

Skillet Chicken Fajita Rice is a one pan dinner delight. Chicken, rice, bell pepper and onion seasoned with cumin, oregano and lime juice ready in under 30 minutes is my idea of the perfect meal.

  • 1 tablespoon olive oil
  • 1 pound boneless chicken breasts sliced
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 onion sliced
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • Lime juice
  • ½ cup rice
  • 1 cup water
  • Fresh cilantro washed and chopped


  1. Preheat oven to 350 degrees.
  2. In a cast iron skillet or oven safe skillet heat oil over medium-high heat. Add chicken, sauté until browned on both sides, about 2-3 minutes. Season with pepper, salt, cumin and oregano, stir to combine. Add onions, peppers, lime juice, stir continue cooking for 5 minutes. Add rice and water, stir to combine.
  3. Carefully cover skillet with foil, place in oven for 20 minutes. Carefully remove from oven, remove foil, and serve warm garnished with cilantro.
