Avocado Fries

Ingredients

  • 1 quart vegetable oil
  • 2 medium ripe Hass avocados
  • 2 large eggs
  • 1/3 cup all-purpose flour
  • ¼ tsp salt
  • Pinch of cayenne pepper
  • 1 ¼ cups panko bread crumbs
  • Salt lemon, and cayenne pepper for sprinkling

Instructions

  1. Clip a fry thermometer onto a medium heavy bottomed saucepan and heat oil to 375 degrees F
  2. While the oil heats, halve, peel, and slice the avocados into long spears; it’s okay if the size varies slightly.
  3. In a small bowl, beat together eggs.
  4. In a separate bowl, whisk together flour, salt, and cayenne pepper.
  5. In a medium bowl, measure out panko crumbs.
  6. Set out a clean plate for coated slices.
  7. Preheat oven to 200 degrees F and prepare a pan with paper towels.
  8. Keep an eye on your oil.
  9. If it’s reached 375 degrees turn to low.
  10. Using one hand and keeping the other hand clean, dip avocado slices in egg, lightly coat in flour mixture, and then coat in bread crumbs.
  11. The fries don’t need a heavy coating-lightly coated is ideal.
  12. Place on a plate until all avocado slices are dipped and ready for frying.
  13. Using tongs, lower 6-8 avocado slices into the hot oil.
  14. Fry until golden brown. Remove from oil and place on lined baking sheet.
  15. Sprinkle with a bit of salt, and place in the oven to stay warm.
  16. Bring the oil back up to 375 degrees before frying the next batch.
  17. Continue frying until all avocado slices are golden brown.
  18. Remove from the oven, sprinkle with a dash of cayenne pepper and fresh lemon juice.
  19. Serve immediately.
