- 
										Clip a fry thermometer onto a medium heavy bottomed saucepan and heat oil to 375 degrees F

										While the oil heats, halve, peel, and slice the avocados into long spears; it’s okay if the size varies slightly. 
- 
										In a small bowl, beat together eggs. 
- 
										In a separate bowl, whisk together flour, salt, and cayenne pepper. 
- 
										In a medium bowl, measure out panko crumbs. 
- 
										Set out a clean plate for coated slices. 
- 
										Preheat oven to 200 degrees F and prepare a pan with paper towels. 
- 
										Keep an eye on your oil. 
- 
										If it’s reached 375 degrees turn to low. 
- 
										Using one hand and keeping the other hand clean, dip avocado slices in egg, lightly coat in flour mixture, and then coat in bread crumbs. 
- 
										The fries don’t need a heavy coating-lightly coated is ideal. 
- 
										Place on a plate until all avocado slices are dipped and ready for frying. 
- 
										Using tongs, lower 6-8 avocado slices into the hot oil. 
- 
										Fry until golden brown. Remove from oil and place on lined baking sheet. 
- 
										Sprinkle with a bit of salt, and place in the oven to stay warm. 
- 
										Bring the oil back up to 375 degrees before frying the next batch. 
- 
										Continue frying until all avocado slices are golden brown. 
- 
										Remove from the oven, sprinkle with a dash of cayenne pepper and fresh lemon juice. 
- 
										Serve immediately.
