Banana Bread with Cajeta Cream Cheese Frosting

Ingredients

  • non-stick cooking spray
  • 2 ripe bananas
  • 1/3 cup butter melted
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups flour
  • Cajeta Frosting:
  • 8 ounces cream cheese room temperature
  • 8 tablespoons 1 stick butter, room temperature
  • 1 cup confectioners' sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 cup Cajeta plus additional for garnishing, optional

Instructions

  1. Preheat oven to 350 degrees.
  2. Liberally spray a loaf pan with non-stick cooking spray.
  3. In a mixing bowl mash, the bananas with butter until smooth.
  4. Add baking soda, salt, sugar, egg, vanilla extract, and flour.
  5. With a handheld mixer or spoon mix until smooth.
  6. Pour the batter into your prepared loaf pan.
  7. Bake for 50 to 65 minutes or until a toothpick or wooden skewer inserted into the center comes out clean.
  8. Remove bread from oven, allow to cool for 5 minutes.
  9. Remove from pan, place on serving dish and frost.
  10. For Cajeta Frosting: Beat cream cheese and butter in a mixing bowl until smooth and well blended.

    Sift in confectioners' sugar and continue beating until smooth.

    Add vanilla and stir to combine.

    Stir in cajeta. Use to frost bread.

    Garnish bread with banana slices and additional cajeta, optional.
