I know there’s hundreds of banana bread recipes all over the internet, but guys my banana bread with cajeta cream cheese frosting is a one of easiest, foolproof recipe for the most incredibly delicious banana bread you will ever find.

I topped my banana bread with cajeta cream cheese frosting with sliced banana and mas cajeta, swoon!

This banana bread recipe is a delicious way to use up those ends of the week old, browned bananas.

Made in a loaf pan, slathered with a cajeta cream cheese frosting, this bread can be enjoyed, shared, or makes for the perfect edible gift.

Today I am giving the classic banana bread a touch of sweetness by adding cajeta to the mix. Cajeta is one of my favorite pantry ingredients that I always have on hand.

Drizzled over ice cream, slathered on toast, or warmed and swirled into atole cajeta is incredible.

WHAT IS CAJETA

Cajeta is a slow-cooked Mexican caramel thick sauce made from goat’s milk.

The name derives from the Spanish word “little box,” which was how cajeta was originally packaged.

HOW TO QUICKLY RIPEN BANANAS

Quickly ripen bananas by placing bananas in a brown paper bag for 24 hours. Bananas naturally emit ethylene but placing the banana in a paper bag helps to speed up this process. My aunt places an apple in with bananas to help speed up this process. I have not personally tried adding the apple.

 

USE THE RIPEST BANANAS TO MAKE BANANA BREAD

The ripest banana produces moist bread. Ripe bananas have tiny black freckles on the skin, become mushy soft and begin to fall apart. This is the ideal time to bake with bananas.

INGREDIENTS NEEDED TO MAKE BANANA BREAD WITH CAJETA CREAM CHEESE FROSTING 

loaf pan

non-stick cooking spray

ripe bananas

butter, melted

baking soda

salt

sugar

egg

vanilla extract

flour

cream cheese, room temperature

confectioners’ sugar

vanilla extract

Cajeta, plus additional for garnishing, optional

HOW TO MAKE BANANA BREAD WITH CAJETA CREAM CHEESE FROSTING

Preheat oven to 350 degrees.

Liberally spray a loaf pan with non-stick cooking spray.

In a mixing bowl mash, the bananas with butter until smooth. I use a potato masher for this.

Add baking soda, salt, sugar, egg, vanilla extract, and flour. 

With a handheld mixer or spoon until smooth.

Pour the batter into your prepared loaf pan.

Bake for 50 to 65 minutes or until a toothpick or wooden skewer inserted into the center comes out clean.

Remove bread from oven, allow to cool for 5 minutes.

Remove from pan, place on serving dish and frost.

For Cajeta Frosting:

Beat cream cheese and butter in a mixing bowl until smooth and well blended.

Sift in confectioners’ sugar and continue beating until smooth.

Add vanilla and stir to combine.

Stir in cajeta. Use to frost bread.

Garnish bread with banana slices and additional cajeta, optional.

Ingredients
  • non-stick cooking spray
  • 2 ripe bananas
  • 1/3 cup butter melted
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups flour
  • Cajeta Frosting:
  • 8 ounces cream cheese room temperature
  • 8 tablespoons 1 stick butter, room temperature
  • 1 cup confectioners' sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 cup Cajeta plus additional for garnishing, optional
