Marigold Bread

Ingredients

  • 1 cup dried or edible fresh marigolds
  • 3 tbsp. honey
  • 1 tbsp lime juice
  • 1/2 cup boiling water
  • 2 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda and
  • 1 teaspoon salt
  • 6 tablespoons butter
  • 1/4 cup oil
  • 1 cup sugar
  • 3 eggs
  • 2 teaspoon vanilla extract
  • 1 cup milk

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine dried or fresh marigolds, honey, lime juice and boiling water. Allow flowers to steep.
  3. In medium bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
  4. Beat butter on medium speed until creamy, add oil and sugar. beat until light and fluffy.
  5. Add eggs one at a time, scraping down bowl after each addition.
  6. Add flour mixture, alternating with milk.
  7. Stir in vanilla extract and steeped marigold.
  8. Spray loaf pan with non-stick spray. Pour batter into pan.
  9. Bake 35 to 40 minutes at 350 degrees.
