Piccadilly Raspa Recipe (snow cone)

Ingredients

  • Cherry syrup, recipe below
  • Pickles
  • Tajin
  • 2 cups fresh cherries pitted
  • 1/2 water
  • 1 cup sugar

Instructions

  1. For cherry syrup:

  2. Combine pitted cherries, water and sugar in a saucepan.
  3. Bring to boil.
  4. Reduce heat to simmer and mash the cherries to break them up.
  5. Remove from heat, allow to cool.
  6. In a food processor or blender blend until smooth.
  7. For Piccadilly:

    To a snow cone cup or Styrofoam cup – layer shaved ice, cherry syrup and top with diced pickles.

  8. Drizzle a bit of the pickle juice over the snow cone, and Tajin or gummy candies, optional.
  9. Serve with a spoon.
