Creamy Black Beans

  • 2 cups homemade black beans strained - plus ¼ cup broth from beans or chicken
  • Handful of cilantro with stems
  • 2 tbsp olive oil
  • ½ onion
  • 2 to matoes
  • 1 jalapeno
  • 1 garlic clove
  • Salt


  1. Remove root ends of cilantro, tear in half and add to food processor along with broth.
  2. Pulse a few times.
  3. In a large skillet over high heat add oil.
  4. Roughly chop the onion, tomato and jalapeno.
  5. When the oil is heated add onions, tomatoes and jalapeno and cook for 2 minutes.
  6. Add garlic, stir to combine and cook additional 1 minute.
  7. Add beans, allow to heat through and remove from heat.
  8. Place in food processor or blender and blend until creamy. Add additional broth in needed.
  9. Season with salt.
  10. Return to skillet on low until ready to serve.
