Fried Oysters

Ingredients

  • 1 ½ cups milk
  • 1 quart of oysters 2 dozen
  • 1 cup flour
  • 1 tablespoon Salt
  • 1 tablespoon freshly ground Pepper
  • 2 eggs
  • Oil for frying

Instructions

  1. Preheat oven to warm and line a baking sheet with paper towels.
  2. Pour 1 cup of milk in large bowl, add oysters and soak.
  3. Over medium high heat in a large skillet add oil.
  4. Beat eggs with remaining ½ cup of milk.
  5. In another bowl combine flour, salt and pepper.
  6. Dredge each oyster in seasoned flour, dip into egg mixture and roll again into seasoned flour mixture.
  7. Fry in batches, try not to overcrowd skillet and fry 2-3 minutes on each side or until golden brown.
  8. Place on baking sheet to drain, keep warm in oven until ready to serve.
