Shrimp Salad with Cumin Cilantro Dressing

Ingredients

  • 16 medium shrimp peeled and deveined
  • 2 tbsp olive oil
  • ¼ tsp freshly ground pepper
  • ½ tsp salt
  • 4 cups spinach
  • 1 grapefruit
  • ½ cup shredded red cabbage
  • ½ cup shredded green cabbage
  • 1 cup shredded carrots
  • 1 cup pecans
  • For Dressing:
  • ¾ cup cilantro washed
  • ½ cup olive oil
  • 1/4 cup fresh lime juice
  • 2 tsp cumin
  • Salt and freshly ground pepper

Instructions

  1. Heat a large skillet over medium high heat. Add oil.
  2. Season shrimp with salt and pepper.
  3. Add Shrimp to pan; cook 3 minutes, stirring frequently, until cooked through.
  4. Set aside.
  5. Cut the peel from the grapefruit using a sharp knife. Cut out the segments.
  6. Line 2 salad plates with spinach, red cabbage, green cabbage, carrots.
  7. Arrange the shrimp, grapefruit and pecans on top of the spinach.
  8. Drizzle with salad dressing or serve on the side.
  9. For Dressing:
  10. Combine cilantro, olive oil, lime juice, and cumin in blender or food processor.
  11. Blend until smooth, season to taste with salt and pepper.
