This vibrant red sparkling strawberry mojito is made with fresh strawberries, a splash of Captain Morgan’s Coconut rum and plenty of fresh mint, but since we are celebrating I thought why not add a bit of sparkle to our mojito with champagne, after all champagne and fireworks go hand in hand.
– lime – fresh mint leaves – sugar – strawberries – ice cubes – Captain Morgan’s Coconut Rum – Chilled champagne
Add lime slices, fresh mint leaves, sugar and strawberries to each glass. Muddle until the sugar is dissolved.
Fill the glass with ice and stir in the rum, top with chilled champagne. Garnish with the mint sprig and extra strawberries.
