Sparkling Strawberry Mojito

This Fourth of July we are heading to the beach to celebrate in style.  We plan to grill, chill and feast with family and friends. Of course we need a fabulous cocktail to sip the day away and with the temperature reaching high into the 90’s I cannot think of anything more refreshing than a mojito to keep us cool.

This vibrant red sparkling strawberry mojito is made with fresh strawberries, a splash of Captain Morgan’s Coconut rum and plenty of fresh mint, but since we are celebrating I thought why not add a bit of sparkle to our mojito with champagne, after all champagne and fireworks go hand in hand.  Happy 4th!

Sparkling Strawberry Mojito

Ingredients
  • 1 lime cut into slices
  • 8 fresh mint leaves plus more for garnish
  • 2 tablespoons sugar
  • 6 strawberriess sliced
  • Ice cubes
  • 4 ounces Captain Morgan’s Coconut Rum
  • Chilled champagne
Instructions
  1. To two tall glasses add 2 lime slices, 4 fresh mint leaves, 1 tablespoon of sugar and half of sliced strawberries to each glass. Muddle until the sugar is dissolved. Fill the glass with ice and stir in the rum, 2 ounces to each glass and top with chilled champagne. Garnish with the mint sprig and extra strawberries.
