Avocado Cheesecake Bars

Ingredients

  • 2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 6 tablespoons, melted butter
  • 2 (8 ounce) packages cream cheese, at room temperature
  • 3/4 cup mashed avocado
  • 1 cup sugar
  • 1 teaspoon lime zest
  • 1 teaspoon fresh lime juice
  • 2 eggs
  • Fresh berries for garnish optional

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray a 9x13 baking pan with non-stick cooking spray.
  3. Mix graham cracker crumbs, sugar and melted butter. Press graham cracker mixture evenly onto bottom of prepared pan.
  4. Bake crust for 7 minutes. Remove from oven; set aside.
  5. Beat cream cheese and sugar until smooth. Add avocado, lime zest and lime juice; mix well. Add eggs one at a time, beating well after each addition.
  6. Spread batter evenly over crust.
  7. Bake for 25-30 minutes or until cheesecake is set in center.
  8. Remove from oven; cool completely.
  9. Place cheesecake in fridge to chill for about 2-4 hours. When ready to serve, slice and garnish with fresh berries.
