Cinco de Mayo is a day to observe Mexico’s victory in the Battle of Puebla. The holiday has taken on a new meaning in recent years, with families coming together to celebrate the culture, colors, and food of Mexico.
When Knorr® asked me to share a recipe featuring Knorr® Rice Sides™ to celebrate Cinco de Mayo, my mind instantly thought of mole, chiles rellanos and tamales. But then I thought, Cinco de Mayo falls on Thursday this year, so why not whip a quick and easy one-skillet meal, family style.

Homemade burrito bowls are super flexible and can be topped with just about anything! Traditionally, burrito bowls are made with chicken, but you can easily customize them to fit your family’s favorite flavors! And don’t forget about leftovers! You can add them to the mix too! Pulled pork, lentils, cooked ground beef or sautéed vegetables, add whatever you have on-hand.

Easy Homemade Chicken Burrito Bowls
Today I want to share with you a recipe that’s so simple and easy to make, you’ll never need to order it in a restaurant again!
These easy one-skillet chicken burrito bowls are one of my favorite restaurant dishes to make at home. I love the ease of a one-skillet meal, and this one is family-friendly, customizable, and easy on the wallet.
My homemade chicken burrito bowls only require a few pantry ingredients. They’re paired with fresh pico de gallo, which I always have on-hand, which brightens the dish with fresh, juicy tomatoes. This recipe is not only easy, but it requires minimal clean-up.
The base for my easy chicken burrito bowls are Knorr® Rice Sides™, which are the perfect solution for creating time-saving, one-pot dinner solutions, and flavorful meals the whole family will enjoy.
From start to finish, this dish only takes 30 minutes. I’ve also added a short video that will walk you through this easy recipe, step-by-step.
Because this recipe is simple and easy to customize for each person, you can have the kids join in on the fun by allowing them to help you prepare the ingredients and add their favorite toppings to their own burrito bowls.

Easy Chicken Burrito Bowls Made with Knorr® Rice Sides™
My chicken burrito bowl features chicken Knorr® Rice Sides™, black beans, cheese and fresh pico de gallo!
When cooking a one-skillet meal, I don’t really want to cook each thing separately — especially since I am trying to prepare the meal in 30 minutes, so I cook the chicken first, remove from pan and then cook the rice. Then I can top with the remaining ingredients, stir to combine and easily serve family style at the table. One pan clean up – yes!

- 3 tablespoon of olive oil
- 1/4 cup of diced onion
- 1 pound boneless skinless chicken breasts, diced into bite sized pieces
- 1 package Knorr® Fiesta Sides™ - Mexican Rice
- 1 15 oz can of reduced sodium black beans drained and rinsed
- 1 cup Monterrey jack
- ½ cup fresh pico de gallo

Start by sautéing onions in 2 tablespoon of olive oil until they start to soften.

Season diced chicken with 1 teaspoon of kosher salt.

Add chicken to pan and cook over medium high heat until chicken has started to brown, about 5 minutes.

Remove chicken from pan and using remaining 1 tablespoon of olive oil prepare Knorr® rice sides as directed on package.

Stir in cooked chicken, black beans and Monterrey jack cheese.

Top with fresh pico de gallo.
