Tex-Mex Pizza – Selena Week

Guys Welcome to Selena week! An entire week dedicated entirely to recipes, cocktails, memories inspired by our South Texas reina Selena Quintanilla. I am SO excited to share this week with you, plus a full recap of the exclusive Raised on Selena dinner I hosted along with Soy Tejana for media and local influencers. Selena was a huge inspiration to me growing up. Her dedication to her music, fans, and creative journey paved the way for Latinas y Tejanas to work hard, hustle and dream big. Now, let’s get our bidi bidi bom bom on!

Its no secret Selena loved pizza. In the 1997 American biographical musical drama film, Selena starring Jennifer Lopez Selena states “ I can eat a whole medium pizza by myself. I love pizza, “

This makes me love her even more!

Today I wanted to pay homage to Selena’s favorite food by sharing the pizza we enjoyed at our Raised on Selena dinner. I kept the pizza true to her love of pepperoni, but I also wanted it also to reflect her stomping grounds of South Texas by giving it a Tex-Mex spin.

This Selena inspired pizza begins with a base of salsa, topped with plenty of chicken fajitas, grilled bell peppers, grilled onions, and pepperoni. Topped with plenty of cheese it is baked, sliced and served warm to our guests.

We served this pizza as an appetizer paired with a shot of icy cold coconut rum garnished with toasted coconut flakes.

Our plating inspiration for the appetizer course was Selena’s fantastic mirror dress.

 

Cooking Tips: I used store-bought pizza dough for this recipe which I extended to fit a sheet pan then baked until crisp. Crisping the dough before adding the toppings prevent a soggy crust.

Tex-Mex Pizza

Yield 6-8 Serves

This Selena inspired pizza begins with a base of salsa, topped with plenty of chicken fajitas, grilled bell peppers, grilled onions, and pepperoni. Topped with plenty of cheese it is baked, sliced and served warm to our guests.

Ingredients

1/4 cup fresh lime juice

4 tablespoons olive oil

1 minced garlic clove

1 teaspoon chili powder

1 teaspoon salt

1 teaspoon pepper

1 pound skinless chicken breasts, cut into 1/2-inch pieces

1 cup diced pepperoni

1 yellow bell pepper, diced

1 red bell pepper diced

1/2 onion, diced

1 package prepared pizza crust

2 cups salsa

2 cups Monterrey jack cheese

Instructions

Preheat oven to 350 degrees.

In a bowl combine lime juice, 2 tablespoon olive oil, garlic, and spices. Add chicken, toss to coat and marinate 15 minutes or up to an hour covered in the refrigerator.

Heat a skillet over medium-high heat. Cook pepperoni until crisp in reminder 2 tablespoon olive oil. Add bell peppers, onions and saute until tender. Remove from skillet, add additional oil if needed, cook chicken for 5-6 minutes or until no longer pink. Return pepper-pepperoni mixture to pan. Keep warm until ready to assemble pizza.

Spread dough evenly on baking sheet. Bake for 15 minutes or until evenly browned and crisp.

Spread salsa over crust; top with chicken, pepper-pepperoni mixture, and cheese. Bake in preheated oven for 6 minutes or until cheese is melted. Slice and serve warm.
