Concha Ice Cream Sandwiches
I recently hosted a fun Facebook live with the creative genius behind Sweet Craft Jewelry. Nicole’s stuff is simply put “SOO FREAKING CUTE” My daughter turned me on her stuff, and I have been addicted ever since. The San Antonio-based crafter creations are all handmade from polymer clay. Nicole’s jewelry is inspired by the sweets she grew up eating – pan dulce, galletas and even Abuelita chocolate and elotes.

For our Facebook live we made concha ice cream sandwiches made with no-churn ice cream. Have you tried making no-churn ice? It is soooo simple and only requires a few ingredients. No stove-top cooking, no machines and can be made with a hand mixer – winning.
I picked up the conchas from Panifico Bakery. The conchas were insanely good. Fluffy, soft and the topping is one of the best I have ever had.

Concha Ice Cream Sandwiches
Yield 4 sandwiches
Forget the boring ice cream sandwiches this Summer it’s all about the mighty Concha. Concha ice cream sandwiches made with no-churn ice cream will be your new addiction.
Ingredients
1 can (14 ounces) sweetened condensed milk
2 teaspoons pure vanilla extract
2 cups cold heavy cream
Conchas
topping of choice, strawberries, chocolate chips, pecans
Instructions
Stir together the condensed milk and vanilla; set aside. With a hand, mixer whip the heavy cream until peaks form. Gently fold the whipped cream into the sweetened condensed milk and vanilla mixture. Pour into a freezer safe container and freeze for 6 hours, or until firm.
To Make Concha Ice Cream Sandwich:
Slice Concha in half, scoop ice cream on the bottom half, add desired toppings. Top with other concha half.
