INGREDIENTS NEEDED TO MAKE CREAMY CHIPOTLE LIME SHRIMP
1 cup light sour cream – for this reicpe I used Hiland sour cream
1/4 cup mayonnaise
2 chipotle peppers in adobo sauce, finely diced
Juice of 1/2 lime
1 teaspoon ground oregano
2 teaspoons salt
1 teaspoon pepper
3 tablespoons olive oil
1 bell pepper, seeds removed and diced
1 onion, diced
3 cloves garlic, minced
1 pound shrimp, peeled and deveined
1 teaspoon salt
1 teaspoon pepper
1/2 cup heavy cream milk
Cilantro, wash and chopped
HOW TO MAKE CREAMY CHIPOTLE LIME SHRIMP
Begin by making a quick sauce to add to our skillet. Stir together light sour cream, mayonnaise, chipotle peppers, lime juice, oregano, salt, and pepper until well combined. If spice is a concern begin my adding half the chipotles, taste and add more if desired.
Heat olive oil over medium heat in a large skillet. Add diced bell pepper and onion, sauté until light and translucent, about 3 minutes. Stir in garlic, sauté an additional minute.
Add the shrimp and sauté for 3-4 minutes, or until the shrimp is cooked through and opaque.
Reduce heat, stir in chipotle cream sauce, and heavy cream, stirring to coat shrimp and warm through.
Serve warm garnished with cilantro.

Taste, add additional salt and pepper if desired.
