I rely on one-skillet meals during a busy week. The beauty of a one-skillet meal lies in their simplicity—minimal cleanup, straightforward preparation, and a harmonious blend of flavors as everything cooks together. With just one skillet, you can create a delicious meal that everyone in the familia will enjoy, plus less clean-up is always a plus.

 

My creamy chipotle lime shrimp epitomizes the one-skillet meal. It’s quick to prepare, requiring only a handful of ingredients, and the cooking process is a breeze. It also features one of my favorite ingredients to cook with shrimp.

 

Shrimp: The Perfect Weeknight Protein

I grew up in Aransas Pas, Texas home of the Shrimporee so shrimp is an staple in my kitchen. Shrimp is a fantastic choice for weekday dinners. Not only is it incredibly versatile, but it also cooks in a matter of minutes, making it ideal for those nights when you need to get dinner on the table fast. Shrimp is a lean source of protein, low in calories, and rich in essential nutrients like iodine, selenium, and vitamin B12.

Moreover, shrimp’s mild flavor makes it a perfect canvas for a variety of seasonings and sauces. In this dish, shrimp pairs wonderfully with the creamy, tangy, and spicy notes from the sour cream, chipotles, and lime. It’s a delightful combination that’s sure to satisfy your taste buds and keep you coming back for more.

INGREDIENTS NEEDED TO MAKE CREAMY CHIPOTLE LIME SHRIMP

1 cup light sour cream – for this reicpe I used Hiland sour cream

1/4 cup mayonnaise

2 chipotle peppers in adobo sauce, finely diced

Juice of 1/2  lime

1 teaspoon ground oregano

2 teaspoons salt

1 teaspoon pepper

3 tablespoons olive oil

1 bell pepper, seeds removed and diced

1 onion, diced

3 cloves garlic, minced

1 pound shrimp, peeled and deveined

1 teaspoon salt

1 teaspoon pepper

1/2 cup heavy cream milk

Cilantro, wash and chopped

HOW TO MAKE CREAMY CHIPOTLE LIME SHRIMP

Begin by making a quick sauce to add to our skillet. Stir together light sour cream, mayonnaise, chipotle peppers, lime juice, oregano, salt, and pepper until well combined. If spice is a concern begin my adding half the chipotles, taste and add more if desired.

Heat olive oil over medium heat in a large skillet. Add diced bell pepper and onion, sauté until light and translucent, about 3 minutes. Stir in garlic, sauté an additional minute.

Add the shrimp and sauté for 3-4 minutes, or until the shrimp is cooked through and opaque.

Reduce heat, stir in chipotle cream sauce, and heavy cream, stirring to coat shrimp and warm through.

Serve warm garnished with cilantro.

Ingredients
  • 1 cup Light Sour Cream
  • 1/4 cup mayonnaise
  • 2 chipotle peppers in adobo sauce, finely diced
  • Juice of 1/2 Lime
  • 1 teaspoon ground oregano
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 3 tablespoons olive oil
  • 1 bell pepper, seeds removed and diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 pound shrimp, peeled and deveined
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup heavy cream milk
  • Cilantro, washed and chopped
Instructions
  1. Stir together light sour cream, mayonnaise, chipotle peppers, lime juice, oregano, salt, and pepper until well combined.
  2. Taste, add additional salt and pepper if desired.
  3. Set aside.
  4. Heat olive oil over medium heat in a large skillet. Add diced bell pepper and onion, sauté until light and translucent, about 3 minutes. Stir in garlic, sauté an additional minute.
  5. Add the shrimp and sauté for 3-4 minutes, or until the shrimp is cooked through and opaque.
  6. Reduce heat, stir in chipotle cream sauce, and heavy cream, stirring to coat shrimp and warm through.
  7. Serve warm garnished with cilantro.
