Pineapple Carrot Pitcher Margaritas

Pineapple carrot pitcher margaritas make for one fun Easter party! Pineapple carrot pitcher margaritas made of fresh pineapple and carrot juice, lime juice, tequila, and Cointreau hit the spot.

Rimmed with a spicy tajin salt rim and topped with fresh carrots my pineapple carrot pitcher margaritas are sure to be a hit at your Easter celebration.

The sweet and fruity flavors of fresh pineapple and carrot juice pair perfectly with tequila. Yay for us!

I wanted to shake up something extra special for our Easter fiesta, that highlighted the goodness of fresh pineapple and carrot juice.

Have you tired fresh carrot juice? It is so delish – not to mention the color is simply stunning.

My pineapple carrot pitcher margaritas are made from all-natural ingredients and taste so much better than a margarita made from a mix.

I wanted to add a bit of spice to my rim, so I mixed some tajin into my salt.  

Let’s talk fresh juice. I use my juicer to juice my carrots and pineapple. Don’t worry you can easily make fresh juice in a blender, here’s how.

HOW TO MAKE FRESH JUICE IN A BLENDER

Dice your carrots and pineapple. You can make separate batches or blend the diced carrots and pineapple together.

Fill the blender halfway with diced fruit and add 1/4 cup water to 1/2 cup to help the blender get going.

Blend until smooth, mixture will be frothy and thick.

Strain the juice and continue blending adding water as needed.

Discard the pulp after straining.

Fresh juice will last two days in fridge. I like to juice the evening before I plan on mixing up margaritas.

HOW TO MAKE A PITCHER OF PINEAPPLE CARROT MARGARITAS

Ready to celebrate? Let’s get mixing – grab a festive pitcher and let’s get pouring.

Pour in your fresh pineapple and carrot juice.

Add your fresh lime juice, tequila, and Cointreau.

Stir & place in fridge to chill until ready to serve.

Rim glasses and serve over ice.

THE BEAUTY OF PITCHER MARGARITAS

Making pitcher margaritas is ideal for entertaining.

Perfect for a crowd. This recipe serves 6 but can easily be doubled.

No need for a cocktail shaker – or having to shake individual cocktails.

Guest can serve themselves.

You can make a variety – mango margaritas – hibiscus margarita – coconut margarita

SPICY SALTY RIM FOR PINEAPPLE CARROT PITCHER MARGARITAS

I rimmed my glasses with a mix of salt and tajin.

Combine the salt and Tajín in a small plate.

Mix with a fork,

Next, take a glass and rub the rim of it with a wedge of lime.

Dip the glass into the salt and give it a small turn or two to coat the rim.

Ingredients
  • 3 cups pineapple juice
  • 1 1/2 cups carrot juice
  • ¼ cup lime juice about 2 limes
  • 1 1/2 cup tequila
  • 1/2 cup Cointreau
  • ice cubes
  • salt
  • tajin
  • carrot strips
Instructions
  1. On a small plate spread salt and tajin. Run a lime wedge around glasses. Dip glasses into salt.
  2. In a pitcher combine pineapple juice, carrots juice, lime juice, tequila, and Cointreau.
  3. Mix, pour into rimmed glasses filled with ice.
