Cumin-Lime Coleslaw
A summer must have for those BBQ weekends. Crispy, cool and loaded with cumin goodness this coleslaw is mi carino’s favorite. Serve over a juicy burger, with thick slabs of smoky brisket or with grilled chicken.
- 1 tablespoon lime juice
- 1 1/2 teaspoons olive oil
- 1/4 teaspoon sugar
- ¼ teaspoon cumin
- 1/4 teaspoon Dijon-style mustard
- 1/4 teaspoon ground black pepper
- 2 cups packaged coleslaw mix
- 1/4 cup shredded carrot
- ¼ cup cilantro

In a medium bowl, whisk together lime juice, oil, sugar, cumin, mustard, and pepper. Add coleslaw mix, carrot, and cilantro; toss gently to coat. Cover and chill for 2 hours before serving.
