Cowboy Cookies

We are currently in the midst of election year so I thought a fun blast form the past would be appropriate. Today I’m sharing a hearty cookie recipe from former first Lady Laura Bush. During the 1992 Presidential election a reporter asked Hillary Clinton is she thought it was ethical for her Arkansas law firm to receive government business while her husband was governor?  She responded with “I suppose I could have stayed home and baked cookies and had teas.”

This comment sparked national attention and Family Circle swooped in and decided to hold a cookie baking contest between the wives of the two candidates. That contest has now become a fun tradition during each presidential election. Readers of the magazine were asked to bake the entries, and vote for their favorite. The first year both Hillary and Barbara Bush made chocolate chip cookies. Hillary in 1996 used the same chocolate chip recipe to beat out Elizabeth Dole’s pecan roll cookies.  In 2000 Laura Bush whipped up a batch of Cowboy Cookie to edge out Tipper Gore and her ginger snaps.  No contest: readers fell in love with these Texas-size cookies that consist of chocolate chips augmented with rolled oats, coconut, pecans and cinnamon. Laura’s Cowboy cookie were such a hit 250 dozen were served at one of the inaugural balls.

Cowboy Cookies are now a Texas favorite enjoyed all year and even sold at Bush Library in Dallas, Texas.  They are on the desert menu at the Café or you can purchases them in a package of three, recipe included.

These cookies are good! Bursting with an array of delicious mix-in oats, shredded coconut, chocolate chips, cinnamon and of course packed with plenty of Texas pecans, which I personally think helped Laura beat out Tipper Gore’s gingersnap cookies and run away with the grand prize. And I must say, these Cowboy Cookies get my vote, they are delicious.
