Sweet Potato Quesadillas
Lately my days have been a busy blur of dental appointments, deadlines, party planning and cleaning. All of this chaos in the midst of fighting a nasty cold had this mami drained. One evening I had no plan or desire to even attempt to make dinner, but with a hungry family I knew I had to whip up something quick, quesadillas to the rescue! I can always count on quesadillas, they are quick and easy to make and always satisfy. Everyone loves quesadillas! They are a quick weeknight meal that can easily transform yesterday’s leftover into a new delicious dinner.
Sweet potatoes and onion are lightly seasoned with taco seasoning and roasted. Top a few tortillas, a few handfuls of shredded cheese and return to the oven. Simple, easy, delicious.
- 2 sweet potatoes peeled and cubed into ½ inch pieces
- 1 small onion diced
- 4 tablespoon olive oil
- 2 tablespoons Old El Paso mild taco seasoning
- 6 Old El Paso flour tortillas for burritos
- 2-3 cups shredded Monterrey jack cheese

Pre heat oven to 375 degrees. Place diced sweet potatoes and diced onion on a baking sheet, drizzle with olive oil and sprinkle with taco seasoning. Roast for 15-20 minutes in oven or until tender. Place 3 tortillas on a baking sheet evenly divide sweet potato-onion mixture and top with shredded cheese. Top with remaining 3 tortillas, brush top of tortillas with olive oil and place in oven. Bake until cheese melts, about 3-5 minutes. Serve warm, sliced.
