Mother’s Day is around the corner and there is no better way to celebrate the amazing mom in your life than with a fabulous brunch. This year I plan to shower my mami with love by whipping up a sweet treat and a few special gifts. With the help of World Market and Shutterfly this Mother’s Day is sure to make her super happy.

Being a mami is one of the toughest jobs. A full-time job being mom requires endless hours of caring for children, keeping up with the house and organizing family. This is exactly why all moms definitely deserve a special day where we can pamper them and show our gratitude. This year I plan on hosting a mami’s only Mother’s Day brunch. Only us gals celebrating together the joys of motherhood, of course no brunch is complete with cake, there must be cake!

My mami adores churros. Even in the sweltering Texas summer heat she will find any excuse to whip up a batch of churros. Crispy, crunchy and dusted in cinnamon-sugar churros are the ultimate treat, not mention you can dunk those bad hoys in a rich chocolate sauce. Yum, no wonder my mami can’t get enough of them.

Then it hit me..wouldn’t it be great to bake a cake that showcased all the yummy goodness of churros? Light, fluffy and dusted in cinnamon-sugar. And of course I had to top it off with a thick layer of chocolate frosting using World Market’s Mexicocoa Cocoa mix. Guys the frosting is amazing. To garnish the cake I dusted the top with a cinnamon-sugar mixture, a few World Market cinnamon sticks and placed it on my new favorite cake stand from World Market. I am serving up my churro cake with café de olla, a Mexican spiced coffee. Be sure to look out for this recipe tomorrow. Over at Shutterfly I created the cutest mug for mami with pictures of the entire family, she is going to love it, especially if it if filled with café de olla. Chocolate Churro Cake

Ingredients
  • For Cake:
  • 2 1/2 cup all-purpose flour
  • 4 tablespoons cornstarch
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoon freshly ground cinnamon I used World Market Cinnamon
  • 2 cup milk
  • 2 teaspoon vinegar
  • 1 1/4 cup granulated sugar
  • 2/3 cup vegetable oil
  • 2 teaspoon vanilla extract
  • For frosting:
  • 8 oz package cream cheese room temp
  • 8 Tbsp 1/2 cup unsalted butter, room temp
  • 3 cups powdered sugar
  • 2 2.5 pkgs of World Market Mexicocoa Cocoa Mix
  • 1/4 tsp salt
  • 1 tsp vanilla
  • For garnish:
  • ¼ cup sugar
  • 4 tablespoon freshly ground cinnamon
  • Cinnamon sticks optional
Instructions
  1. To make cakes: Preheat oven to 350ºF. Lightly spray two, 9 inch cake pans with non-stick cooking spray.
  2. In a large mixing bowl combine flour, corn starch, baking powder, baking soda, salt, and cinnamon.
  3. In another mixing bowl stir together milk, vinegar, sugar, oil, and vanilla extract. Add the wet mixture into the dry ingredients and stir until smooth. Divide batter equally among the two cake pans, bake for 30 minutes or until a toothpick inserted comes out clean. Remove from oven, allow to cool completely then remove cake from pans and frost with the cinnamon chocolate frosting. Place in the fridge until ready to serve. When ready to serve combine sugar and freshly ground cinnamon in a small bowl. With a spoon dust top of cake with cinnamon-sugar mixture and garnish with cinnamon sticks.
  4. To Make frosting: In the bowl of a stand mixer beat together cream cheese with butter on medium/high speed until creamy scraping down the bowl as needed. Reduce mixer speed; slowly add powdered sugar and cocoa mix. Continue mixing until well combined, scraping down sides of bowl as needed. Add vanilla, mix well and use to frost your cake.

    Hi! I’m wondering what I could sub for the packets of mexicocoa, which I can’t easily get. Maybe some other cocoa mix with cinnamon added to it?

      Hi Devorah,

      You can use cocoa powder mixed with cinnamon or grate Mexican chocolate, such as Abuelita or Ibbara.
